Grilled Smoky margarita
As much as I love tequila (see my recent Mexico trips if you need proof), Mezcal has never been my thing. Something about the smoky flavor just wasn’t appealing to me. Until now. After perusing Pinterest one day, I came across an interesting recipe for a smoky margarita. Well, it was the height of COVID and I was staying at home, so I figured, why not try it? So glad that I did, because the few extra minutes it takes to make the grilled lemon juice syrup are worth it. This one has a very distinctive taste, that pairs well with meats and of course guacamole. Check it out!

Ingredients:
2oz Mezcal ( I like Ilegal)
.75oz Honey Syrup
.75oz Grilled Lemon Juice
.5oz Lime Juice
For Grilled Lemon Juice:
Grill 2 lemon halves and 2 lemon wheels until charred
Let cool and juice
For Honey Syrup:
Whisk together 1/4 cup hot water and 1/2 cup honey. It will make more syrup than you need for the cocktail, but it keeps for a bit.
Directions:
Mix all ingredients in a cocktail shaker over ice until cold (at least 30 seconds)
Strain and serve over ice in a salt rimmed glass
Garnish with a charred lemon wheel
